Aceto balsamico bianco

Our journey into the world of balsamic vinegar brought us to another specialty from Modena. Unlike the classic balsamic vinegar, this one is made only from white grapes. These were carefully selected and processed into must, which was then refined in various stages to preserve its clear and light color.
The dressing developed its harmonious structure and balanced sweet and sour taste through ageing in new oak barrels. The result is a dressing with a delicate aroma that enhances the taste of the food without masking its flavors.

Perfect harmony

Our mindfully extracted and first-class olive oil deserves a proper companion. For our vinegars, we pay attention to the careful harvesting of the grapes, which are processed into must and, after years of maturation, unfold into high-quality Aceto. Just like our oil, our vinegar is born from soil, plant, sun and wind. And yet producing a high-quality vinegar requires far more patience and centuries of knowledge: For many years, good Aceto matures in wooden barrels to achieve the quality that a suitable partner for our olive oils needs.
